Pesto Variation 000003 – Cilantro Pesto.
For this variation I used the 100g bag of walnuts I had in the cupboard, 4 medium sized garlic cloves, about a cup of olive oil and this bunch of cilantro – about 2 cups.
I put the garlic and the walnuts through the food processor. Then I added the cilantro and the olive oil and a pinch of salt and processed it all together and ended up with this.
How is it? Um, amazing if I do say so myself. I didn’t put any cheese in this one and the result is a really clean tasting pesto. The variations in terms of ways to eat this pesto are unlimited. I had some on rice noodles which sounds a little weird but turned out great actually and it’s gluten free.
