Lemon Pressed Yogurt
We had some yogurt and the due date was the next day so I had to think of something to do with it. Had some lemons in the freezer because I saw that meme on facebook about putting lemons in the freezer, how lemons cure pretty much any sickness ever, and grating the frozen lemon is a great way to add lemon to whatever you want.
Whenever I use yogurt I pretty much always go for the 6% “balkan” style which isn’t too hard to find. Yes it’s higher in fat and tastes richer. I would use 10% yogurt if I could but it’s much more difficult to find. So I pressed the yogurt by wrapping it in a clean j-cloth, securing with an elastic band, and then tying it to my kitchen tap for a few hours to let all the water drain out. You can also tie it to a rung in your fridge and put a bowl underneath if you have a fridge like that.
Once most of the water was drained out I grabbed one of the frozen lemons and grated as much as I could without really straining myself haha. It’s kind of labour intensive. I probably grated somwhere around 2 – 3 tablespoons. I also added a few grinds of pink Himalyan salt. This would work with a little or a lot of the grated lemon. Just depends how lemony you want it to be and how much strength and endurance you have at your disposal to grate the frozen lemon. The effect is amazing, really clean and fresh.
