Lemon is one of the most versatile and useful items to have in the kitchen, and one of the healthiest. It can be used in all the ways one would normally use vinegar, taking into account the flavor change of course, in salads and dressings, and to marinate. Its tang lends itself to sweet and savoury dishes alike. Lemon juice is great in smoothies and hot and cold drinks for extra zip and extra cleansing benefits. Lemon zest provides even more intense flavor. Using unwaxed lemons is best for zest. Lemon benefits to health and overall well being are many. When it comes to clean eating, lemon, lemon juice, lemon zest, are hard to beat. A little bit goes a long way and lemon literally lifts out and helps to discard impurities from your system.

Lemon Pressed Yogurt

We had some yogurt and the due date was the next day so I had to think of something to do with it. Had some lemons in the freezer because I saw that meme on facebook about putting lemons in the freezer and then grating frozen lemon into or onto whatever. The grated frozen lemon is great on ice cream by the way

Whenever I use yogurt I pretty much always go for the 6% “balkan” style which isn’t too hard to find. Yes it’s higher in fat and tastes richer and that’s what I like. I would use 10% yogurt if I could but it’s much more difficult to find. For this lemon yogurt, I pressed the yogurt by wrapping it in cheesecloth, securing with an elastic band, and then tying it to my kitchen tap for a few hours to let all the water drain out. You can also tie it to a rung in your fridge and put a bowl underneath if you have a fridge like that. A clean j-cloth also works as well as cheesecloth.

Once most of the water was drained out I unwrapped the yogurt and put it in a bowl. Then I grabbed one of the frozen lemons and grated as much as I could without really straining myself haha. It’s kind of labour intensive. I probably grated somwhere around 2 – 3 tablespoons. I also added a few grinds of pink Himalyan salt. This would work with a little or a lot of the grated lemon. Just depends how lemony you want it to be and how much strength and endurance you have at your disposal to grate the frozen lemon. The effect is amazing, really clean and fresh.
