Cool cucumber and pineapple salad – perfect for hot summer days. All you need for this salad is cucumber, chopped, and pineapple, fresh or out of the can. I tried to keep the cucumber pieces the same size and shape as the pineapple. And then some dressing, unless you want to be all 80 10 10 about it and skip the dressing. I went retro and used thousand island dressing but oil and vinegar or whatever you feel like would work just as well. The possibilities are infinite! Chopped herbs would work great in this too I think.
