Spiralized Potato Egg Breakfast

Spiralized potato was way easier make than I thought!spiralized potato egg on spinach breakfast

So we finally bought a spiralizer by starfrit and had to kick it off (so many more tasty recipes to come using this fun spiralizer) with a quick and easy breakfast recipe that we really loved. So many variations to change this one to fit your style, and guaranteed to be a really tasty and healthy breakfast.

 

Ingredients

1 medium- large potato (sent through the spiralizer on the thinnest setting works best)

1 tblsp of Olive oil

2 eggs (boiled 7-8 minutes only if you want it a bit runny like us)

1 carrot (also spiralized – wider diameter carrots work best)

1 handfull baby spinach leaves

a drizzle of balsamic vinegar

Pepper/salt to your liking

 

Prep

add olive oil in a non-stick pan (preferably ceramic)

bring heat burner up to a medium heat

start boiling eggs in a separate pot of water

add spiraled potato and carrot to pan once oil has warmed

check underneath if browning after 5-6 minutes

flip it over and cook another 5-6minutes

pull eggs out of boiling water and immediately throw into bowl of cold water to stop them from cooking

add spinach to your plate with fried potato carrot nest on top and add eggs on top

drizzle with balsamic vinegar and salt and pepper to taste et voila!!
