All over pickled spicy mango these days. It adds so much to salads or whatever you want to make.
Made this amazing salad with it the other night also using orange bell pepper, zucchini and tomato. The mango works great with the zucchini and the peppers
2 pickled mangoes (1 300g bag), chopped
3 pinches of crushed red pepper
1/2 cup fresh mint, chopped
1/2 cup fresh cilantro, chopped
2 medium sized tomatoes, chopped
1 orange bell pepper, chopped
1 medium sized zucchini, chopped
pinch of salt
1tbsp olive oil
1/2 red onion, chopped
Serve with cashews sprinkled on top.
