Ok pesto variation 000002 consists of 2 cups arugula, more than a cup of pecans, 4 garlic cloves, a cup of olive oil, and the juice of a lemon. I toasted the pecans to bring out the flavour and at the end of the day I think I could have used more nuts, especially considering I decided not to add any cheese. Lemon really bumps it up and makes it very clean. Perfect for summer. And we can add cheese later, with whatever we make with the pesto, like some Stilton or another blue cheese.
